Red and Green Bell Pepper Bites

This nutty, crunchy, creamy snack packs a mouthful of deliciousness in just one bite.

 

 

 

Ingredients

Serves: 4

Serving Size: 6 bell pepper bites per serving

  • 1/4 cup unsalted sliced almonds, dry-roasted if desired
  • 4 ounces fat-free or low-fat cream cheese, softened
  • 1 teaspoon salt-free lemon pepper seasoning blend
  • 1 teaspoon fresh lemon juice
  • 1 large green bell pepper, stems, ribs and seeds discarded, cut into 12 pieces
  • 1 large red bell pepper, stems, ribs and seeds discarded, cut into 12 pieces

Directions

  1. Transfer 1 tablespoon of the almonds to a small plate, reserving for garnishing. Process the remaining almonds in a food processor or blender for 15 to 20 seconds, or until finely ground.
  2. In a medium mixing bowl, beat the cream cheese, lemon pepper seasoning blend and lemon juice with an electric mixer for 1 to 2 minutes, or until creamy. Add the ground almonds and beat for 10 seconds, or until combined.
  3. Spoon about 1 teaspoon of the mixture on each bell pepper piece. Or snip the corner off a resealable plastic bag (a plastic freezer bag works well) and pipe about 1 teaspoon of the mixture on each bell pepper piece.
  4. Garnish with the reserved 1 tablespoon almonds.
Cook’s Tip: Dry-roasted almonds add an extra nutty flavor to the crisp bell pepper pieces. To dry-roast the nuts, cook the almonds in a medium skillet over medium heat for 3 to 4 minutes, or until golden brown, stirring occasionally.
